Roasted Balsamic Strawberry Cherry Pita Pizzas with Arugula
Serves 2-4
1 small yellowish onion, thinly sliced
2 tablespoons balsamic vinegar, divided
1/4 teaspoon of salt
10 deep red cherries, pitted and halved
three or four 4 whole wheat grains pitas (I take advantage of 100 calorie pitas)
1 cup of reduced fat shredded mozzarella cheese
1/2 cup arugula
Sodium and pepper
Directions
Preheat oven to 400 degrees F. Toss strawberries and cherries in 1 teaspoon of essential olive oil and 1/4 teaspoon of salt. Spread on cooking sheet and place in oven for a quarter-hour.
Heat medium saute pan over medium high heat and add 1 teaspoon of olive oil. Add onions and mix regularly until onions begin to brown. Reduce heat to moderate low and add 1 tablespoon of balsamic vinegar and a pinch of salt. Cook 1 more minute and then remove from warmth and reserve.
Place whole wheat grains pitas on the nonstick cooking sheet. Brush pitas with 1 teaspoon of essential olive oil and sprinkle with salt. Evenly deliver roasted strawberries and cherries, mozzarella cheese, onions onto pitas. Bake for 10-12 moments at 400 degrees or until sides of pitas begin to turn golden dark brown.
